Guess What??

This post is kind of two recipes in one! Here you’ll find recipes for both oven roasted broccoli and fingerling potatoes!

I served this to my family with Ginger Maple Chicken, and as good as the chicken was, the seasoned broccoli was honestly my favorite part. Believe me…that’s saying something! As a child I wouldn’t eat broccoli. About 3 years ago I decided it wasn’t so bad, but in the past year I’ve enjoyed it less and less. My mom has always steamed it and I usually just add salt. It’s ok but it’s nothing great. This recipe, however, is great!

I started by cutting both types of vegetables small…the broccoli I cut into small florets and the fingerling potatoes I washed and sliced in half. After placing them in a singer layer on parchment paper on a cookie sheet, I used a basting brush to apply a small amount of olive oil on each veggie.

I then sprinkled Mrs. Dash seasoning, salt, and pepper over the broccoli. I also mixed in small/medium pieces of bell pepper. For the fingerlings I chose Lawry’s seasoned salt.

Personally, I was so happy with the way these vegetables turned out! I was happy for multiple reasons. First of all, the fingerlings were yellow AND purple potatoes and were from a local farmers’ market! Second, everything had so much flavor while being HEALTHY VEGETABLES! I hope your kids, even if they are picky eaters, give these veggies a try because they might be a hit! I hope this is the best broccoli you’ve ever eaten!


Roasted Seasoned Broccoli

Yield: About 4 servings


  • About 1 lb broccoli, cut small
  • 1/2 bell pepper (preferably orange or yellow)
  • 2-3 Tbsp olive oil
  • Mrs. Dash original seasoning mix
  • dash of salt
  • dash of pepper


  1. Lay mixture of broccoli and peppers in single layer on cookie sheet lined with parchment paper.
  2. Using a basting brush, brush a small amount of olive oil over all the broccoli (just enough to get a tiny amount on each piece).
  3. Sprinkle as much or as little Mrs. Dash, salt, and pepper over the vegetables.
  4. Cook at 425 degrees Fahrenheit for about 15 minutes or until edges of broccoli begin to brown.



Oven-Roasted Fingerling Potatoes

Yield: About 4 servings


  • About 2.5 lbs fingerling potatoes
  • 2-3 Tbsp olive oil
  • Lawry’s original seasoned salt


  1. Lay fingerling potatoes in singer layer on cookie sheet lined with parchment paper.
  2. Brush lightly with olive oil and sprinkle with a fairly generous amount of Lawry’s seasoned salt.
  3. Bake at 425 degrees Fahrenheit for 25-30 minutes. Enjoy!

Note: Despite the already small size of the potatoes, I cut them in half unless they were super small. You may choose to keep them whole as long as they are a consistent size!
